The general name for a very fresh, unsalted and little-drained cheese sold in a plastic mold.
The mold in which the curds are drained is also called a “faisselle”.
Faisselle is produced all over France by a number of manufacturers.
It can be made of cow’s milk or goat’s milk, and more rarely is made of ewe’s milk.
A bright white, moist cheese with no rind and a very soft, delicate texture which is the reason why it is sold directly in the mold.
Very fresh, tangy flavor with a distinctive lactic taste and a creamy, moist texture for a mild, light cheese.
