This famous cow’s milk cheese is a soft-ripened, washed-rind cheese that is industrially produced in the Dordogne département by the Chaumes company. It is matured for approximately one month. Its soft paste is covered by a yellowish orange rind of a hay color, which is what it is named after (“chaumes” translates as “thatches”).
The cheese is best known in its large format sold as cut cheese, but it is also available in a seven-ounce small format called “Petit Chaumes”.
