This cheese made from raw, whole ewe’s milk from the Basque country has been manufactured by the monks of the Notre Dame de Belloc monastery since the 1960s.
A flattened wheel with a convex heel. Its bloomy rind is naturally gray and spotted.
A fine, dense, soft paste of a bright white color; a natural gray, spotted rind; a slight ewe’s cheese taste and hazelnut notes; generally a mild cheese.
