Made with partially skimmed pasteurized cow’s milk, this uncooked pressed cheese of Dutch inspiration is covered with a natural or paraffin wax rind. Its texture is creamy and its paste shows no “eyes”. Its taste is mild if it has only been matured for three months and more distinctive if it has been matured for longer (a maximum of six months). It is made in 11-pound wheels with 9.8 in. in diameter for 2.7 in. thick. It is also available in a larger 26.4-pound format with 13.7 in. in diameter and 3.9 to 4.7 in. thick.
Covered with a natural or paraffin wax rind, generally of an orange color.
Its flavor is mild.
