Rochebaron is a cheese from the village of Beauzac in the Auvergne. It is matured for six to eight weeks. This creamy, mild blue cheese can presented as part of a cheese platter or become a useful ingredient in cookery. It can be enjoyed throughout the year, as it is produced from the milk of seasonally adjusted cow herds.
Les Fromagers Associés (Bongrain group)
Its rind is of a grayish black color and is covered with white down.
A fruity and yet salty flavor.
